These waffles are light and crisp, yet different from your regular waffles.  Add fruit to the batter or on top for a whole new twist that is sure to please the whole family!

1 TBSP ground flax
3 TBSP warm water
1 cup unsweetened plain plant milk
2 TBSP lemon juice or apple cider vinegar
1/3 cup stoneground cornmeal
1 1/3 cups whole wheat flour
3 TBSP coconut sugar
¼ tsp salt
2 tsp baking powder
2 TBSP cornstarch
1 tsp vanilla
In a small bowl combine ground flax and warm water and let stand 5 minutes.
Combine plant milk and lemon juice and let stand 5 minutes.
Whisk together cornmeal, whole wheat flour, coconut sugar, salt, baking powder and cornstarch.  Add flax mixture, milk mixture and vanilla and mix well.
Cook in preheated waffle iron according to manufacturer’s directions.  Serve hot with pure maple syrup and fruit.
Variations: Stir in 1 cup blueberries or other fruit before cooking in waffle iron.

Blueberries are a natural choice for these tasty waffles, but you can add any berry, grated apple, mashed banana-the possibilities are endless!
