This unusual dip has a deep smoky flavor with hints of artichoke that is undeniably good. Use as a dip or sandwich and wrap filling. You will find many other uses for this dip if you don’t gobble it down on its own.
2 cloves garlic, peeled
10 oz artichoke hearts packed in water, drained and rinsed
1 15-oz can garbanzo beans, drained and rinsed
2 TBSP tahini
3 TBSP red wine vinegar
1 TBSP lemon juice
1 TBSP smoked paprika
1 tsp salt
Add all ingredients to food processor and blend until almost smooth.
Garnish with a few whole beans and a sprinkle of smoked paprika if desired.
Serve like hummus, or use as a spread in sandwiches or wraps.
