This rich pudding tastes exactly like fresh banana bread only so much healthier!  Great for dessert, a snack or breakfast, this is one pudding you’ll make again and again!

10 dates, pitted
1 banana, peeled
1 tsp lemon juice
1 ½ cups unsweetened plain plant milk
1/8 tsp ground turmeric
6 TBSP chia seeds
2 TBSP chopped walnuts, optional

Put dates, banana, lemon juice, milk and turmeric in blender and blend until very smooth.  Add chia seeds and blend 10 seconds.  Pour into container, cover and chill.  Stir after 2 hours.  Chill another 6 hours or overnight.


Sprinkle with walnuts, if desired.

Just like banana bread, you can add fresh or dried fruit, vegan chocolate chips, nut or seed butters to your tastes.
